The Ultimate Christmas Popcorn Mix

We are only a few days away from the big day, and hopefully, you have bought and wrapped all your presents, have finished all your work commitments, and have now found a place on the sofa that you’re not going to move from for the next week, while you're watching your favourite Christmas movie. Well, what is the best accompaniment to a movie... popcorn!
Of course, I would have a popcorn mix dedicated to Christmas. Why would you expect anything less?
You might have seen a post last week where I took my love of popcorn to another level and shared with you the perfect gift idea for the popcorn lovers in your life. I mentioned that you’d have to wait for a new mix to add to the collection, and here it is.
Now with that sort of introduction, it’s going to have to be big right? Well, let me share with you THE ultimate Christmas popcorn mix. You’re probably asking yourself, ‘what makes this the ultimate mix,’ well it’s full of Christmas flavours, colours, and it’s just pure Christmas.
I have pulled out all the best ingredients from my popcorn gift box, for this ultimate mix. You start off by blending your ginger biscuits into a fine crumb, which is combined with melted white chocolate and the popcorn. You then mix in half your toppings; mini marshmallows, pretzels, and fudge. Lay your popcorn out on baking paper, and sprinkle over the remaining toppings, plus the festive sprinkles. Melt the milk chocolate, drizzle over the top and sprinkle with edible glitter. (For this recipe, I have chosen all dairy-free ingredients to stick with my vegan blogmas theme). Let your mix sit out until it's completely cool (which won't take long in this weather), then break into servable pieces.
You can wrap this up as a gift, or keep it all for yourself. You get a real combination of flavours with warm and spicy ginger, creamy fudge, sweet chocolate, and salty pretzels. THE ULTIMATE CHRISTMAS POPCORN MIX
This recipe makes 8 bowls of popcorn.- 1 tbsp light oil
- 1/3 cup popcorn kernels or 6 cups of popped corn
- 200g dairy-free white chocolate
- 200g ginger biscuits
- 50g mini marshmallows
- 50g pretzels
- 50g dairy-free fudge
- 50g festive sprinkles
- 10g dairy-free milk chocolate
- A sprinkle of glitter (optional)
INGREDIENTS
- On a medium heat, add your oil to a large saucepan. Add your popcorn kernels and shake to coat. Once you hear your first pop, reduce to a low heat. Every now and then, shake the saucepan to make sure the popcorn doesn't burn.
- Once the popping has stopped, lay your popcorn on baking paper and remove any unpopped corn. Scoop the corn into a large bowl. Sprinkle with a pinch of salt.
- Blend your ginger biscuits into a fine crumb.
- Melt the white chocolate and gradually pour all over your popcorn mix and stir well. Sprinkle over the ginger biscuit crumb and mix.
- Mix in half your toppings (mini marshmallows, pretzels, and fudge). Lay out the popcorn mix evenly onto baking paper and pour over the remaining toppings, plus the festive sprinkles.
- Melt the milk chocolate and drizzle all over the popcorn. Sprinkle with edible glitter.
- Leave to set before eating.
