After consuming a years worth of chocolate in one cupcake, I thought this time I would bake something much healthier. I use the word healthy very loosely, it includes cranberries so it's as healthy as it's going to get at this time of the year. Who would have thought cocoa-less brownies are called blondies? I guess you learn something new every day! White chocolate and cranberries are such a great combination; you get the sweet taste from the chocolate, and a slight sourness from the cranberries. I always like to make mine a little thicker so it's crunchy on top, and the middle is all gooey and soft, I just have to cut mine into smaller pieces. Doesn't stop me taking two though! These are great little bites to share around the Christmas table.

WHITE CHOCOLATE AND CRANBERRY BLONDIES

This recipe makes 12 healthy pieces.

    INGREDIENTS

  • 115g unsalted butter, a little extra for greasing
  • 115g caster sugar
  • 2 medium free-range eggs
  • 125g plain flour
  • 2 tsp vanilla extract
  • 200g white chocolate, chopped
  • 110g dried cranberries

    INSTRUCTIONS

  1. Pre-heat your oven to 190°C, 170°C fan, Gas mark 5. Grease and line a baking tin.
  2. Melt the butter and half the chocolate in a pan over a medium heat until nice and smooth. Alternatively, put the butter and chocolate in a bowl and microwave in 20-second blasts, stirring well each time.
  3. Whisk the eggs, vanilla and sugar in a large bowl until creamy and slightly thickened. Add the sugar in two batches around the side of the mix so not to knock out the air.
  4. Sieve the flour into the bowl, pour in the chocolate mixture and fold gently. Add half the remaining chocolate and half the cranberries.
  5. Carefully pour your mixture into your greased and lined tin, and sprinkle the reminding chocolate and cranberries on top.
  6. Bake in your pre-heated oven for 35-45 minutes until the top is golden brown.
  7. Leave to cool, and cut into squares.
