Vegan Christmas Morning Waffles

Happy Christmas Eve everybody! We have about 12 hours until the big day, and I have found the perfect recipe which can be enjoyed by all.

What’s your Christmas morning like? My family are very relaxed when it comes to Christmas, and as much as I would love them to wake up super early to get the festivities started - I know it’s not going to happen in this household. I’ve come to terms with it, and it does mean I get a couple more hours of sleep, so there is a slight positive there. Food is very important when it comes to Christmas, and even breakfast needs to be taken seriously. After receiving a waffle maker as a gift last year, I feel like I have found a new best friend in the kitchen. I would suggest a waffle maker for absolutely anybody who loves breakfast, though savoury waffles for lunch and dinner are a huge plus too.

After a year of trial and errors with waffle recipes, I’ll be treating my family to breakfast waffles this year. I have three different flavours of waffles (as you can never have enough) each inspired by a recipe from blogmas.

Gingerbread waffles, inspired by my gingerbread blondies - for those who like things a little spicy but also sweet. Serve with crumbled gingerbread, fresh cream and pecans.

Caramel waffles, inspired by my chocolate and caramel cheesecake - for those who like things rich and sweet. Serve with bananas and drizzled with hot melted chocolate and gold sprinkles.

Lemon and coconut waffles, inspired by my lemon and coconut snowball truffles - for those who like things fresh and citrusy. Serve with shredded coconut and drizzle with lemon juice and maple syrup.

I have devoured all three kinds of these waffles, but I would have to say that I’m very much a caramel waffle kinda gal. I have the worlds biggest sweet tooth, and the date caramel is just so rich in flavour - so caramelised and beautiful. And I love the added bananas on top too. You don't have to cut them into stars (I used a cutter), but doesn't it just look so festive? Bananas just work in every breakfast waffle (or pancake) situation. If you need more topping ideas you can use jams and preserves, (heat them up a little for a warm drizzle), fresh fruits and crushed nuts. Sprinkle over spices like cinnamon or ginger, or drizzle agave syrup. If there are no limitations, chocolate chips, squirty cream, and brownie pieces are the way to go. These waffles are so crispy on the outside and soft in the centre. How long you cook yours for will depend on your waffle maker, but I always go a little over the recommended time to really get that crunch. The batter can be made the night before and stored covered in the fridge; just give it a quick whisk before you start cooking. If you have any waffles left over (why would you though!?) pop them into a toaster for about 2 minutes. Finding out you can reheat waffles in the toaster was such a life-changing moment.

VEGAN CHRISTMAS MORNING WAFFLES

Each flavour makes 2-3 waffles.

    INGREDIENTS

    CARAMEL WAFFLES
  • 225ml / 1 cup non-dairy milk + 20ml cider vinegar
  • 148g / 1 cup plain flour
  • 36g / 1/4 cup corn flour
  • 1/2 tsp baking powder
  • 1 tbsp light brown sugar
  • Pinch of salt
  • 1/4 tsp cinnamon
  • 2 tbsp flavourless oil
  • 1/2 tsp vanilla extract
  • 2 tbsp caramel date sauce
  • COCONUT LEMON WAFFLES
  • 225ml / 1 cup non-dairy milk + 20ml cider vinegar
  • 110g / 3/4 cup plain flour
  • 36g / 1/4 cup corn flour
  • 1/2 tsp baking powder
  • 1 tbsp caster sugar
  • Pinch of salt
  • 15g / 1/4 cup shredded coconut
  • 2 tbsp flavourless oil
  • 1/2 tsp vanilla extract
  • Zest 1 lemon
  • GINGERBREAD WAFFLES
  • 225ml / 1 cup non-dairy milk + 20ml cider vinegar
  • 148g / 1 cup plain flour
  • 36g / 1/4 cup corn flour
  • 1/2 tsp baking powder
  • 1 tbsp dark brown sugar
  • Pinch of salt
  • 2 tsp ginger
  • 2 tbsp molasses
  • 2 tbsp flavourless oil
  • 1/2 tsp vanilla extract

    INSTRUCTIONS

  1. Each recipe is made exactly the same way, make sure you follow the right ingredients for each.
  2. Pre-heat your waffle maker as instructed.
  3. In a small bowl, mix together the non-dairy milk and cider vinegar and leave to curdle for 15 minutes - this will be your buttermilk.
  4. In a large bowl, sift all the dry ingredients and mix. Add in the wet ingredients and whisk until it's nice and smooth. If the mixture seems too runny, add a little flour, if it seems too thick, add a little milk.
  5. Pour into your hot waffle maker and cook as instructed. Serve warm with a selection of toppings.
